I love the holidays. I really do. But my gosh why does life have to become so hectic? Why can’t we just sit back and enjoy the season? I could go on and on about this, but today I’m going to share a delicious dinner menu that you can throw together for your upcoming Christmas festivities.
When I was younger and worked at Hot Dog on a Stick, I used to make STOUFFER’S Lasagna for our annual Christmas party. STOUFFER’S is such a great solution to feed your friends and family during the busy holiday season. It’s simple and the best tasting lasagna ever. It became such a staple at our holiday parties, that every one would plan around the lasagna. So when I was at Wal-Mart last week and browsing the frozen aisle, I knew I needed to grab some lasagna.
I love to have it on hand, so if we ever have unexpected guests or just need something to make for dinner, I throw one of these lasagnas in the oven.
It turns out that this past weekend we were just too busy with an ugly sweater party (my first ever) and my hubby’s christmas party. I needed something on the table asap and knew this lasagna would be perfect. While the lasagna was baking I knew I wanted to have a side dish. Since I’ve come to love anything and everything caprese, I knew this would be a hit.
I decided to add a combination of beans, basil, mozzarella chunks, tomatoes and a bunch of other yummy stuff to make this a delicious Three Bean Caprese Salad. This salad is so flavorful and light. It adds such a great flavor and makes a great side dish for your lasagna.

Get the Recipe: Three Bean Caprese Salad
Ingredients
- 1 cup great northern beans, drained and rinsed
- 1 cup light kidney beans, drained and rinsed
- 1 cup garbanzo beans, drained and rinsed
- 2 cups cherry tomatoes, quartered
- 1/2 cup fresh mozzarella pearls
- 1/2 cup red onion, diced
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 10 fresh basil leaves, chopped
- 3 teaspoons olive oil
- 3 teaspoons balsamic glaze
Instructions
- Add all the ingredients to a large bowl and mix well.
- Adjust the salt and pepper, if needed. You can also drizzle some more balsamic glaze if you want.
