I’m sharing one of my all-time favorite slow cooker recipes with you. I’ve had this recipe ready to post for a while, but I wanted to wait until the weather was right.
Last week we had a cold front come into Nevada and it got so chilly. I know for everyone back east 45 degrees is warm, but for this desert girl it is boarder line freezing for me. Ha! I had to get the sweaters, gloves and uggs out. That’s how I knew I needed to share this recipe with you today. I’ve fallen in love with my slow cooker this past year. I was never a slow cooker lover, but I’ve tried numerous recipes and use it all the time now.
My favorite thing to use with my slow cooker are the slow cooker bags. Have you seen them? They’re available in most grocery stores and they make clean up a breeze. You just line the slow cooker with the bag, add all the ingredients, set your slow cooker to the appropriate time and walk away. Come back hours later to a delicious meal then throw your bag away and wha-la you have a clean slow cooker already. See so easy!
What’s also easy is this soup. When I created this recipe a few months ago, Sean and I feel in love with it. I make it at least once a month and we love it every time. I love that this soup is loaded with a different variety of vegetables. You have everything from carrots, celery to green beans, potatoes and white beans. Also the meat is tender and taste great! This is the ultimate comfort soup for those chilly winter nights.
I use a 6 quart slow cooker for all of my slow cooker recipes. It’s perfect for this recipe too. This recipe will fill up the entire slow cooker, so don’t be alarmed. This recipe does make a ton, so make it on a night you have company over or plan on having some yummy leftovers. Either way, I think you’ll love this soup this winter.

Get the Recipe: Slow Cooker Beef and Vegetable Soup
Ingredients
- 1 pound beef stew, cubed
- 1 1.5 ounce beef stew seasoning packet
- 2 bay leaves
- 1 tablespoon Worcestershire sauce
- 1 large onion, diced
- 3 garlic cloves, minced
- 6 cups beef broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup frozen corn
- 1 cup fresh green beans, cut into 1 inch pieces
- 1 pound potatoes, cubed
- 1 cups crushed tomatoes
- 1 can petite diced tomatoes, drained
- 1 cup canned white beans, drained and rinsed
- garnish with Italian parsley
Instructions
- Place beef into slow cooker, add seasoning, bay leaves and Worcestershire sauce. Mix to combine.
- Add remaining ingredients except the white beans. Stir to combine.
- Cover, cook on high for 6-8 hours or cook on low for 12 hours.
- Stir in the beans 30 minutes before serving.
- Garnish with parsley, serve & enjoy!
Slow cooker soups are my favorite! Especially when winter comes around, I need all of the soups that I can get my hands on. This beef and veggie version sounds so hearty and delicious!
What is beef stew seasoning packet?
Sorry I’m just now seeing this. You can find it in your seasoning area at your local grocery store (where you find the pre-made taco seasoning packets and such).
