Pasta Salad {Lite & Healthy}
You can now indulge in pasta salad, but not feel guilty about it. This Pasta Salad {Lite & Healthy} is made with greek yogurt and taste amazing.
Let’s talk pasta salad today. I love everything about it and could eat it for lunch every day. But I could do without the high calories and heavy mayo. Let’s face it, pasta salad is not very diet friendly.
But gosh darn it taste so good. So I knew that I needed to make a pasta salad that I wouldn’t feel guilty about eating. I wanted to make this dish a lighter version so I decided to add greek yogurt. Isn’t greek yogurt awesome? Wanna know some fun facts about greek yogurt? Here are some:
- It has double the protein then regular yogurt
- Greek yogurt has low sodium
- It’s low in carbohydrates
- Easy to digest
- And has probiotics. Which are great for your tummy.
As you can see I had to make this pasta salad with greek yogurt. Who doesn’t want to eat healthy with a ton of benefits? My fear was it wouldn’t have that creamy yummy flavor that all pasta salads have. So I added a little bit of light mayo to the mix. Just to give it that umph. And all pasta salads have to have a nice crunch too. So I added some yummy crunchy veggies.
When I made this pasta salad I thought that the hubby and kids wouldn’t like it. They aren’t into the whole healthy stuff. Especially when they’re used to the normal unhealthy stuff. When I cook I try to make dishes that I know they’ll like, but with me being on a diet (not lately, but oh well) I needed something to keep the cravings and hunger at bay.
Guess what?!? The whole family loved this recipe! Yay! I didn’t even tell them this was a healthier version either. Why do they need to know, right? 🙂 I ended up saying something to the hubby later that night and he said he would of never known. Yippee!

Get the Recipe: Pasta Salad {Lite & Healthy}
Ingredients
- 16 ounce elbow macaroni
- 1/4 cup greek yogurt
- 5 tablespoons light mayonnaise
- 3 tablespoons red wine vinegar
- 3 teaspoon Dijon mustard
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- pinch salt and pepper
- 2 cups grape tomatoes, cut in half
- 1 cup cucumber, chopped
- 1/2 medium onion, chopped
- 1/2 red bell pepper, chopped
- garnish, basil and/or parsley (optional)
Instructions
- Make pasta according to package instructions. Drain and run cold water over pasta. Place in a large bowl.
- In a glass measuring cup or small bowl, add greek yogurt, mayonnaise, red wine vinegar, Dijon mustard, oregano, garlic powder, salt and pepper. Mix well to combine.
- Stir in tomatoes, cucumber, onion, and bell pepper with the pasta. Mix well.
- Add the greek yogurt mixture and mix well.
- Refrigerate pasta salad for a minimum of 3 hours to overnight.
- Serve cold or at room temperature.
