When I was thinking about creating this recipe, I knew I wanted some sort beans in it. Since I’m crazy about chickpeas I knew I needed to add them to the salad. Okay, okay back to the salad recipe. Do you like salads? Or are you blah about them?

I’m a sucker for a fresh salad. The fresher the better and man oh man do I love crunchy veggies. That’s why this salad is perfect in my opinion. It’s loaded with all sorts of good for you veggies.

And get this, it takes only 10 minutes to throw it together. You do need to let it sit for about 30 minutes, so the flavors can marry, but other than that it’s an easy peazy side recipe. I was thinking about the up coming holidays the other day (oh my goodness I can’t even believe I just typed that) and knew that this Tomato Chickpea Salad would be perfect for a potluck, side dish at Thanksgiving or even a party.

Ingredients
 

Salad: 

  • 1 15 ounce can garbanzo beans, drained and rinsed
  • 1/4 cup black beans
  • salt and pepper to taste
  • 1/2 onion, diced
  • 1/2 bell pepper, any color, chopped
  • 2 roma tomatoes, diced
  • 1/2 cup chopped cilantro

Dressing: 

  • 2 tablespoons olive oil
  • 2 tablespoon red wine vinegar
  • 3 garlic cloves, minced
  • 1/2 tablespoon lemon juice
  • 1/2 tablespoon honey
  • salt and pepper to taste

Instructions
 

  • In a small bowl or measuring glass, add the dressing ingredients and stir together.
  • Add all salad ingredients into a large bowl and stir to combine.
  • Pour in the dressing, stir, cover and refrigerate for at least 30 minutes.
  • Serve and enjoy!
