Can we talk about chickpeas for a minute? Lately I’ve become obsessed with them and love to put them in everything. But what is the actual name for these yummy beans? Is it chickpea or garbanzo bean? And why do they have two names? Is anyone else confused by this because I sure am.

Okay, okay back to the salad recipe. Do you like salads? Or are you blah about them?

I’m a sucker for a fresh salad. The fresher the better and man oh man do I love crunchy veggies. That’s why this salad is perfect in my opinion. It’s loaded with all sorts of good for you veggies.

And get this, it takes only 10 minutes to throw it together. You do need to let it sit for about 30 minutes, so the flavors can marry, but other than that it’s an easy peazy side recipe. I was thinking about the up coming holidays the other day (oh my goodness I can’t even believe I just typed that) and knew that this Tomato Chickpea Salad would be perfect for a potluck, side dish at Thanksgiving or even a party.
