Ahi Tuna Poke Bowls

Today’s recipe will come to a shock for my family and close friends. They probably won’t believe me for once second, but I can promise you that this recipe is by far one of my favorites to date! For as long as they’ve know me, I used to dislike seafood.
Can you believe it? It’s true. I hate any and all types of seafood. I was one of those that would walk into a restaurant or grocery store and instantly hate the “fishy” smell. There were times I couldn’t even stay because I couldn’t stand breathing it in. Fast forward like a billion years and I’m obsessed. Not only am I obsessed with seafood but I actually crave it…daily.
I can now smell it, eat it and enjoy it! See people can change. It only took me a trillion years, haha.
One of my favorites is Ahi Tuna. I love how fresh and delicious it is. You can make it so many ways, but my favorite is poke. I decided to try creating a poke bowl recipe of my own, but I knew I needed some greens to go with the tuna. Because I’m always looking for something quick and easy, I knew Eat Smart Gourmet Vegetable Salad Kits would be the perfect pairing.
The Eat Smart Asian Sesame Gourmet Vegetable Salad Kit is by far one of the tastiest salad kits I’ve ever tried. No joke!! It’s fresh, convenient and a super healthy salad. This salad kit combines six superfoods with crunchy bits and a sweet, savory sesame dressing. The powerful blend has red and green cabbage, carrots, kale, cashews, sesame sticks and a yummy sesame dressing. Everything you need in a salad!

Get the Recipe: Ahi Tuna Poke Bowls
Ingredients
- 1 pound cubed Ahi Tuna
- 1/4 cup soy sauce
- 1 teaspoon rice vinegar
- 1 1/2 tsp sesame oil
- 3/4 tsp red pepper flakes
- 1/3 cup green onions
- 1/2 tsp sesame seeds
- 1 avocado, sliced
- 2 cups cooked white rice
- 1 Eat Smart Asian Sesame Vegetable Salad Kit
- extras: soy sauce, garlic chili sauce or red pepper flakes
Instructions
- Combine Ahi Tuna, soy sauce, rice vinegar, sesame oil and pepper flakes to a medium bowl. Stir to coat. Marinate 30 minute, or up to 2 hours.
- Sprinkle green onions and sesame seeds over Ahi Tuna.
- In a large bowl mix together the Asian Sesame Eat Smart Gourmet Vegetable Salad Kit; set aside.
- Place rice in a bowl, add salad, Ahi Tuna and avocado slices.
- Add more soy sauce and garlic chili sauce, if desired.
- Eat immediately and enjoy!
Seafood has always been one of my favorite foods, and I’m not picky when it comes to that! These bowls look gorgeous, Cyndi! I love the greens you paired with this. Such a light and flavorful meal! YUM!
