Ahi Tuna Rice Bowls

Ingredients

  • 1 cup white rice
  • 1 1/2 cup water
  • 1 6 ounce box Bumble Bee SuperFresh® Seared Ahi Tuna
  • 1 1/2 tablespoons sesame oil
  • 1/2 medium red onion thinly sliced
  • 3 cloves garlic minced
  • 1 cup brussels sprouts trimmed and thinly sliced
  • 1 tablespoon grated fresh ginger
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup low sodium chicken broth
  • 2 tablespoons soy sauce
  • 1/2 cup shredded carrots about 1 carrot
  • 1/4 cup snap peas
  • garnish: sesame seeds green onions, soy sauce and red chili sauce

Instructions

  • Heat water over medium-high heat in a sauce pan. Once boiling, add rice. Bring to a boil, then cover and reduce heat to a simmer. Cook without removing the lid for 17 minutes. Remove from heat and let sit for 5 more minutes.
  • Prepare Bumble Bee SuperFresh® Seared Ahi Tuna according to package directions.
  • Using a medium size skillet, add sesame oil and heat to a medium-high heat. Add onion and garlic; cook and stir for 1 minute. Add brussels sprouts, ginger and red pepper flakes; cook for another minute.
  • Add broth and soy sauce; cook for 2 minutes. Add vegetable mixture to a medium size bowl. Stir in carrots and snap peas. Stir to combine all vegetables.
  • Prepare the bowl by adding some rice, then the vegetable mixture and finally topping with Bumble Bee SuperFresh® Seared Ahi Tuna. Garnish with sesame seeds, green onions, soy sauce and red chili sauce for heat.
  • Eat immediately and enjoy!
