Ingredients

  • 2 cups Bob's Red Mill Old Fashion Oats
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1/4 teaspoon salt
  • 2 cups almond milk or any milk
  • 1 large egg
  • 3 tablespoons unsalted butter melted
  • 1 1/2 teaspoon vanilla extract
  • 1 1/2 cups gala apples chopped
  • 1/4 cup sliced almonds

Instructions

  • Preheat oven to 350 degrees F. Spray an 8 x 8 baking dish with cooking spray.
  • Stir together the oats, brown sugar, baking powder, cinnamon and salt in a large mixing bowl.
  • In another medium size bowl, whisk together the milk, egg and vanilla. Add the melted butter slowly, whisking constantly.
  • Pour the milk mixture into the oat mixture. Add apples and stir until combined.
  • Pour mixture into the prepared baking dish. Top with sliced almonds.
  • Bake uncovered for 35-40 minutes, until the top is golden brown and the oats have set.
  • Remove from oven and let cool for 5 minutes. Serve and enjoy!
